Goat meat is part of Australia's agricultural culture. As one of the largest exporters of goat meat, like cattle, Australia's goats are raised in a natural environment that is green, safe and healthy, and are not fed a diet with any added hormones, so goat meat that is recognised worldwide for its quality.

More than 70% of the world's population loves goat meat, and it is also a local authentic staple in Asia, Latin America, the Mediterranean, the Caribbean and the Middle East. China is the world's largest producer, consumer and importer of goat meat, and in addition to sheep meat, China's need for goat meat is growing.

全球有超过70%的人喜爱山羊肉,在亚洲、拉丁美洲、地中海、加勒比和中东地区,山羊肉还是当地的正宗主食。中国是世界上最大的羊肉生产国、消费国和进口国,除了绵羊肉,中国对山羊肉的需要也在不断增强。

According to the Australian Department of Agriculture and Water Resources (DAWR), in 2019, Australian goat meat exports totaled 21,000 tons and imports from Greater China amounted to 2,673 tons, accounting for about 12.6% of Australia's total goat meat exports, second only to the United States (14,859 tons).

据澳大利亚农业与水利资源部(DAWR)数据显示,2019年,澳大利亚山羊肉出口总量为2.1万吨,大中华区进口量为2,673吨,约占澳洲山羊肉总出口量的12.6%,仅次于美国(14,859吨)。

In Australia, there are generally two types of goat meat available - Farmed Goatmeat and Rangeland Goatmeat. While they are similar in many ways, they differ in composition, flavour and tenderness.

在澳大利亚,山羊肉一般有两种可供选择——农场饲养和牧场饲养。尽管它们在许多方面都很相似,但在成分、风味和嫩度方面却有所不同。

Farmed Goatmeat

农场饲养的山羊肉

Farmed Goatmeat are usually sourced from farming areas in Australia where rainfall is abundant and productivity is higher, and are managed in a similar way to cattle and sheep. Because they are a meat product intended for consumption, these goats are larger and fatter than the natural pasture-raised breeds. They produce goat meat that is light pink to bright red in color with fine fibers and evenly distributed white fat, and tend to be more tender, juicier, and milder in flavor.

农场饲养的山羊,通常产自澳大利亚降雨量丰沛、生产率更高的农区,管理方式也与牛只、绵羊类似。因为是专供食用的肉类产品,所以相较天然牧场放养的品种,这类山羊体型更大、更肥美。它们生产出的山羊肉,色泽呈浅粉红色至鲜红色,带有细纤维和均匀分布的白色脂肪,口感也往往更嫩、更多汁,风味也更温和。 

Rangeland Goatmeat

They are also known as "unmanaged goats", bush goats or wild goats. It is a hybrid breed of goat that has adapted to living in Australia's low rainfall and arid pasture areas. In general, pasture-raised goats are lower in muscle and fat content and will have stronger meat flavor. There are subtle differences in such goat meat products depending on age, quality and origin.

指的是在天然牧场上,以牧草为主食的山羊类型,它们也被称为“无管理的山羊”、丛林山羊或者野山羊。这是一种杂交品种的山羊,已经适应了在澳大利亚降雨量少且干旱的牧场区域生活。一般来说,牧场放养的山羊肌肉含量和脂肪含量都较低,肉质风味会更强。根据年龄、品质和产地的不同,此类山羊肉产品也会有细微区别。
