The terms "lamb" and "mutton" distinguish the different ages of lamb.

Lamb
羔羊

A lamb, generally a sheep that has not yet erupted its permanent incisors (or permanent teeth), is about one year old and is usually slaughtered between 4 and 12 months of age.

The age at which lambs are slaughtered depends on the different demands of the market. For example, lambs slaughtered at 12-14 kg are supplied as dairy lambs, while some lambs are slaughtered at weights approaching 40 kg before they are ready for the market. In the Australian market, the majority of lambs supplied are around 18-24 kg.

一般指尚未萌发恒切齿(或称永久齿)的羊,年龄大约在1岁左右,通常在4-12个月大之间被宰杀。

羔羊被屠宰的年龄取决于市场的不同需求。比如屠宰体重在12-14公斤的羔羊会作为乳羊供应,而一些羔羊屠宰体重接近40公斤后才会准备上市。在澳大利亚市场上,大部分供应的羔羊体重在18-24公斤左右。

 In Australia, the term "Prime Lamb" is generally used to refer to lambs for slaughter.

Spring Lamb
春季羔羊

Spring lambs refer to the peak production period, as under the traditional breeding cycle, lambs are usually born in the winter of the previous year and are sold in the spring of the following year when they reach approximately 12 months of age.

代指产量高峰期,因为根据传统的育种周期,羔羊一般在前一年的冬季出生,月龄到大约12个月时,会在下一年的春季被出售。

Mutton
成羊

An adult sheep, defined as a sheep with at least one permanent incisor, is generally older than 10 months and thus can be considered an adult. Adult lamb is dark red in color and usually has a stronger flavor than lamb.

是指至少有一颗恒切齿的绵羊,一般年龄超过10个月,因而可以视为成年。成羊羊肉呈深红色,通常风味比羔羊肉具有更强的风味。
