Founded in 1994, the Sullivans Cove Distillery, based on the old brick factory in Sullivans Cove, is the second oldest whisky distillery in Tasmania. Sullivans Cove's reputation was poor in the early years. However, the production process has been improved, and its quality has been changed until 1999.

In the 2014 World Whiskey Awards, Sullivans Cove French oak barrel won the "World's Best Single malt Whiskey", ranking among the top whiskey brands. Today, it is still the only whisky brand in Australia to receive this award.

Sullivans Cove Former chief winemaker Patrick Maguire (Patrick Maguire) was inducted into the Global Whiskey Hall of Fame in 2018. Not only is he the third Australian to win the title, but he is also among the world's most influential whisky celebrities.

Most of its products are not sold offline outside the local area, but also need to be ordered through the official website, and the quantity is very limited. In the Hobart factory store, eager customers can only buy one bottle per person. Some of the newly marketed boutique old wines will be pre-ordered in the official website lottery and will be sold out on the same day.
